Talk about sustainability in Food Technology

Earth Charter International organized a seminar on sustainability and how to integrate this notion in the curricula with professors of the University of Costa Rica’s Food Technology Department, in response to the interest of several professors of this Department. The seminar took place on June 24th, and all professors and researchers of this Department and the Center of Food Technology Research participated.

In the first talk, Alicia Jiménez, staff member of the Earth Charter Center on ESD at the University for Peace introduced notions of sustainability and the Earth Charter, and some examples were given of how the Earth Charter has been used in education around the world.

Then, practical examples of how the University of Costa Rica is moving towards a sustainable campus were offered by Eng. Gerlin Salazar, staff member of the Institutional Program on Environmental Management of this University.

Lastly, Dr. Jackelin García, from the Education Research Institute of the University of Costa Rica, shared the Institute’s work on how they are helping other Departments to incorporate environmental notions in the curricula, and finding crossover between their work and what other education institutions that use the Earth Charter do to incorporate sustainability in education.
